Product description

A Colombian coffee with a special honey process, featuring notes of red fruits, raisin, and orange.

The complexity of fermentation.. in a refreshing fruity cup.

The "Wine" crop presents a highly complex Colombian experience resulting from the use of a "special honey fermentation process." The Castillo variety beans, grown at an altitude of 1800 meters, shine with a rich set of sensory notes combining red fruits, orange, raisin, vanilla, and lemon. This cup is characterized by high, fruity sweetness and a smooth, light, refreshing body that gives the experience a sense of refreshment despite the abundance of flavors.

At Ninth Bar, backed by over 15 years of experience serving more than 3 million cups of specialty coffee from our Jeddah roastery, we roasted this crop to a "medium" degree to make it exceptionally versatile; it reveals fruity acidity and clarity when brewed as a V60, while transforming to reflect caramel sweetness and a velvety body when prepared as an espresso, highlighting the true intelligence behind this special fermentation.

Flavor Experience:

The sip opens with a touch of refreshing lemon and orange, centered around the density of red fruits and raisin, finishing with an elegant balance and a vanilla touch in a smooth, light body that leaves a refreshing sensation in the mouth.

  • Ratio: 1g coffee to 2g yield (1:2).
  • Dose: 18g finely ground coffee in the portafilter.
  • Yield: 36ml of espresso liquid in the cup.
  • Time: Ideal extraction time between 26 to 30 seconds.

Why You'll Love It

  • Special Fermentation Complexity: The custom honey process creates complex flavor layers reminiscent of raisin and vanilla that are rarely found together.
  • High Fruity Sweetness: A perfect balance between sweetness and medium acidity that satisfies lovers of naturally sweet coffee.
  • Refreshing & Light Body: Unlike heavy, highly complex coffees, this crop features lightness and refreshment making it suitable for any time.
  • Amazing Brewing Versatility: Delivers two completely different profiles (fruity clarity in V60, and velvety caramel in Espresso).

FAQ

1- Why is this coffee called "Wine"?

Named after the complexity of the flavor layers resulting from the "special honey fermentation," which gives the coffee a depth and richness resembling a fine wine tasting experience.

2- What distinguishes "Special Honey Fermentation" from traditional honey processing?

It is the use of controlled, specific fermentation methods during the drying of the beans with part of the fruit mucilage (pectin), enhancing notes like raisin and vanilla to a greater degree than regular processing.

3- How does its taste differ between V60 and Espresso?

In the V60, the flavors (orange, lemon, red fruits) will be brighter and clearer, while in Espresso, the focus will shift towards caramel sweetness and a velvety body.

4- Is the body in this coffee heavy?

No, despite the complexity of flavors, the body is classified as "smooth, light, and refreshing," meaning it is easy to drink and doesn't leave heaviness.
