Product description

Only 500 Litres Selected from Provence — An Organic Blend of Three French Olive Varieties with Green Almond & Fresh Herb Notes

In Lourmarin, at the foothills of the Luberon, the olive groves of Domaine de Gerbaud produce an organic extra virgin olive oil deeply rooted in the landscape and traditions of Provence.

From the November 2025 harvest, this distinguished oil carries the protected AOP / PDO Provence designation, while Oliviers & Co’s selection from this harvest is limited to just 500 litres.

Two Certifications: Organic Farming & Provençal Origin — AOP & BIO

This olive oil brings together two important European certifications.

The AOP / PDO Huile d’Olive de Provence designation protects its geographical identity and requires production to follow an officially defined specification within the designated Provençal area. PDO status also means that the stages of production are carried out within the defined geographical area according to recognized know-how.

At the same time, the bottle carries the European Organic Farming certification, with certification code FR-BIO-01 – Agriculture France, confirming production in accordance with European organic farming standards.

Three Provençal Varieties — A Limited 500-Litre Selection

The character of this oil comes from a carefully composed blend of three traditional French olive varieties:

  • Aglandau – 49%, bringing intensity and distinctive green notes of artichoke, green tomato and freshly cut grass.
  • Salonenque – 41.4%, contributing a softer, more delicate character with notes of almond and apple.
  • Grossane – 9.6%, adding roundness and a gentler profile that helps balance the bitterness and peppery intensity of the blend.
  • For the November 2025 harvest, the Oliviers & Co selection is limited to just 500 litres, sourced from tanks 1 & 2, as stated on the bottle.

This makes it a genuinely limited selection tied to a specific harvest and production lot.

The Character of the Oil

  • This is a distinctly green and vegetal olive oil rather than a soft or predominantly floral style.
  • On the nose and palate, expect notes of fresh herbs, almonds and green almonds, freshly cut grass, artichoke, apple, tomato and other green vegetal nuances, followed by a lively, persistent peppery sensation in the throat.

The Domaine itself explains that bitterness and pungency are natural and desirable elements of the character of fresh Provençal olive oils rather than imperfections. Its Aglandau olives are particularly associated with grassy notes of artichoke, green tomato and cut grass.
