Coming from Colombia from the Quindio region, Armenia specifically, at an altitude of 1700-1200 above sea level, where the 7-hectare Castellón Farm is located at an altitude of 1450 above sea level.
Carlos Arcilla comes from a Colombian family that grows coffee, and when he bought the farm 32 years ago, he was able to prepare the soil, revive and develop its natural springs, as well as plant shrubs of beautiful colorful flowers such as Heliconia and Memelia, and several authentic trees. Now the tree-lined Castellón farm looks pretty stunning.
The crop is treated with an anaerobic honeycomb, where the coffee is fermented for up to 72 hours while maintaining the viscous membrane surrounding the coffee beans, and then spread over raised beds, which helps to bring out the flavors of the coffee and its clarity to be in front of a wonderful combination of apple acidity, lemon and the sweetness of sugar cane.
Roasted with a track suitable for espresso and drip drinks so you can enjoy it in any glass you crave.
