Description: The coffee arrived in the Penir Meriah region in Gayo Highlands or "Gayo highlands" in 1908, approximately 200 years after coffee entered Indonesia through the Dutch. Our visit to these highlands in 2015 with the European Specialty Coffee Association marked the beginning of our deep exploration into the secrets of this enchanting island and its many farms, where we were welcomed by regional and central governors with a comprehensive program starting from the capital "Banda Aceh" in the north of the island, passing through Takengon, and ending at the Gayo highlands overlooking Lake Lut Tawar, a place of stunning beauty.
The region holds the rights to cultivate "Kopi Gayo" or Gayo coffee, which is considered a "registered global protected classification," and no other region is permitted to grow this unique type of bean. The coffee is grown at elevations reaching 1700 meters above sea level, which are ideal and required for specialty coffee cultivation.
The flavors of Penir Meriah washed coffee are characterized by the deep, well-known profile of Sumatra island coffees, with a full-bodied, earthy, herbal flavor that resembles the natural bitterness of cocoa. Processing this coffee with wet pulping enhances its delightful flavors, as the cherries are pulped and left to ferment in the honey layer for up to 36 hours to develop a gentle sweetness. Then, the remaining honey layer is washed off, and the beans are left to dry slightly under the sun. Afterward, the protective husk is removed, leaving the beans moist, which are then dried again under the sun—a non-traditional method in coffee processing—giving the green beans a bluish hue, hence the name "Blue Gayo" or "Blue Gayo."
After removing the husk, the beans are packed in special storage bags before being sorted into designated bins.
Suitable for pour-over coffee or for very rich espresso, either plain or with milk.
