Hitachi’s vacuum chamber extracts air to stabilize pressure at about 0.8 atm, helping to slow oxidation and preserve nutrients. Nutrient retention (DHA and Vitamin C) Laboratory tests showed the vacuum chamber helped retain DHA levels in mackerel and Vitamin C in pineapple and papaya longer compared to regular cooling chambers. DHA in mackerel after 3 days remained higher in the vacuum chamber than in the regular chamber. Moisture and freshness preservation The vacuum environment maintains moisture inside foods, reducing water loss, and keeping meat, cheese, fish, and lettuce in their original texture longer. Slices of meat, cheese, salmon, and red leaf lettuce retained much higher moisture levels inside the vacuum chamber. Flavor and seasoning preservation The vacuum chamber minimizes dripping (liquid loss from food), keeping flavor and texture close to the original even after several days of storage. Lamb tested after 7 days showed less drip loss in the vacuum chamber compared to normal freezing and thawing. By extracting air from food, marination speeds up as spices penetrate ingredients faster. This means shorter marination and cooking times, whether soaking meats or preparing recipes that involve drying ingredients. Vacuum chamber with two zones at different temperatures Hitachi offers two zones inside the vacuum chamber at different temperatures for storing food without freezing while preserving flavors and textures: Sub Zero mode: about -1°C – ideal for meats and fish. VIP vacuum insulation panel – remarkable energy savings The refrigerator’s structure uses a VIP vacuum insulation panel, a thin layer of very fine fiberglass fibers evacuated from inside, providing much higher thermal insulation than traditional insulation (urethane). The inverter compressor generates a large amount of cold air with low energy consumption through smart control. Each chamber has its own fan for balanced airflow. Two economical thermal sensors (in fridge and freezer) detect temperature changes independently. No need for a voltage stabilizer, as the refrigerator can operate over a wide voltage range (about 130–300V). Strong cooling even at ambient temperatures up to about 60°C. Keeps the freezer cold for up to 15 hours during power outages.
