Farmers: a community of 8 farmers from the Panaman Reserve management Region: Palestino Governorate, Wila County Altitude: 1900 meters above sea level Processing: dried and anaerobic soaking Variety: Pink Bourbon / Pink Bourbon Hints: coconut, chocolate milk, cherry This harvest from the farmers' community is a small and limited quantity "micro lot" and the community is characterized by its long experience and cohesion in farm management and crop cultivation such as coffee. They decided to use the drying and anaerobic soaking method using tropical fruit. Wila region is a region that has become known in the coffee world thanks to its exceptional crop production, and many see it as the best area in Colombia, especially for micro lot crops. This is due, by God's grace, to its fertile geographical location for agriculture. Many of its residents are experienced and skilled farmers, with semi-tropical forests, warm climate, high altitudes, and diverse local weather. The Palestino community consists of Colombians of Palestinian origin, born in Colombia or migrated there. Their province is located in the south of Wila Valley, and it is distinguished by its tropical diversity of fruits, forests, and more. Many of them were born as children of farmers or learned farming, so many of its residents have agricultural expertise and a passion for producing distinguished crops year after year. To produce this batch, the coffee undergoes a precise process starting with a careful selection of the most ripe Pink Bourbon beans. These beans are then fermented with a special blend of tropical fruits, a technique that gives the coffee a unique complexity and depth of flavor. The subsequent anaerobic fermentation process lasts for 12 days, creating an exceptional coffee experience. The final result will be astonishing, a symphony of flavors. With the first sip, you will experience an explosion of flavors that will captivate you and stay in your memory.
