Chalus coffee is always present on the tables. On his farm, a variety of "Arabica" and "Castillo" coffees are grown as a result of the gradual and permanent application of organic farming. The "Castillo" strain is environmentally friendly and has a high fruiting capacity, and it results from the merging of the two types of coffee "Catura" and "Timor". "Castillo" has qualitative characteristics such as large density and grain size, and it is resistant to insects and diseases such as grain rust (Roya) and green coffee seed disease.

In the fertile Huila Mountains in the southwest of Colombia, you will find the Chalossos coffee plantation. Chalos Fernandez is one of the fifth generation of high quality coffee growers, which his family has been cultivating for over 110 years in the Baikol region. Since assuming responsibility for the farm in succession to his grandfather in 2010, Chaluses and his brothers have maintained their traditions despite forging a path of their own as a third wave of specialty coffee producers. In addition to cultivating exceptional coffee, Chaluses and his family are leaders in their community because they are role models in environmental conservation and pride. Because they provide job and educational opportunities for their community, Chalus has dedicated himself to producing the perfect cup of coffee, building excellent direct business relationships with roasting artisans and helping his community, in addition to working on the prosperity of his region through projects that can be accomplished by selling his coffee production

Coffee plants grow between 1450 and 1600 meters above sea level alongside orange trees, mandarins (tangerines), lemons and bananas, in addition to sugar cane and tropical fruits such as mangoes, pineapples and guama (a local fruit in South America). So this elevation and natural vegetation create the perfect environment for coffee to grow with a unique flavor and sweetness.
