The Paz-Mejía family has been growing coffee for more than 140 years in the Santa Barbara region of Honduras. Arnold is a fourth-generation grower, and to them these lands are sacred, representing their heritage and hundreds of stories and life experiences.

When the coffee is placed in the receiving tank, a hydraulic system transfers it to a siphon where the empty, green and dry beans are separated and then into the Jota Gallo four-jet pulping machine, which is about 40 years old and is powered by an electric motor with a speed regulator and then is removed The gum then passes into the Korito Channel where a stream of water pulls the beans with less weight and the heavier beans remain at the bottom and this ensures that the coffee becomes uniform in size and weight ensuring minimal spoilage of the beans.
