In 2015-2016, the results of cultivation began to appear, and the harvest season began with fruits of higher quality, relying on picking the fruits according to certain criteria, and one of the most important of these criteria is to choose fruits that contain 16 degrees of sweetness, then those fruits are fermented for up to 12 hours in special bags To prevent rotting and then dried in solar drying beds, after that a manual test is conducted again to ensure the selection of the best types of grain. The drying process lasts between 25 to 30 days at an average temperature of 22 degrees Celsius until the humidity level reaches 11% after which the grains are packed The coffee is in special bags made of nylon and left for up to four months to ensure that the taste of the coffee is preserved.
