Elida is a strain of Alcator: grown and harvested in the Boquete region of Panama.

This crop has received a new treatment called carbonation, which helps enhance the texture and bring out the flavors in each bean.

The coffee beans are placed in special tanks with high pressure and high humidity.. Where carbon dioxide is introduced into those tanks through special tubes and the internal air is disposed of, making it free of air.

This step of carbonation is called "slow drying" and lasts several days.

Then the grains are dried on raised beds.
