Sodium bicarbonate

Widely used as a leavening agent in bread, an antacid to treat heartburn, in cleaning to remove odors and polish surfaces, and as an agent to regulate body alkalinity to support digestive and kidney health. It is added to pastries to raise them (with an acidic component like yogurt or lemon juice) or to make cakes and desserts.
