Wadi Harazi Minia / Natural Processing
Processing: Natural
Genetic Type: Yemeni
Traceability: Haraz < Sana'a < Yemen
Elevation: 2200 meters above sea level
This coffee processed by the natural method comes from the Haraz region in Yemen, one of the oldest and most renowned coffee-producing areas in the country. It was cultivated at elevations ranging between 2200 and 2000 meters above sea level, and represents the Yemeni variety, an original genetic group of Arabica discovered exclusively in Yemen, with a balanced sweetness profile and a distinctive regional character.
⸻ Microlot Series
This series offers exceptional coffees sourced from fresh and dried cherry supply chains, using hybrid protocols post-harvest. Farmers follow traditional methods under careful supervision to ensure quality and consistency in each batch.
⸻ Processing: Natural
This batch underwent the traditional natural processing method in Yemen, developed for traceability after selective hand-picking. The cherries were dried whole on raised beds for 21 to 28 days, depending on climate and altitude. Farmers monitored the turning process daily to ensure even drying and prevent over-fermentation — which is critical at Haraz elevations (2200–2000 meters).
The low humidity and cool mountain breezes provide ideal conditions for slow, balanced drying, enhancing sweetness, clarity, and body. The cherries were processed according to strict post-harvest protocols, including moisture control and traceability markings to ensure each batch meets export quality standards.
This balance between tradition and precision highlights the unique character of the Yemeni genetic profile, with floral depth, caramelized fruit flavors, and a finish with a distinctive cola note.
⸻ Genetic Type: Yemeni
Yemeni is a new Arabica genetic group, discovered exclusively in Yemen through a partnership between Qima Coffee and World Coffee Research. It features a unique genetic makeup different from Typica and Bourbon varieties and is among the oldest and richest genetic groups of Arabica discovered.
Yemeni coffee is renowned for its high ability to stand out in the cup, displaying a wide range of flavors, from vibrant floral notes to prominent sweetness and complex acidity.
In Haraz, where farming preserves ancient traditions, Yemeni thrives in the high-altitude environment, producing flavor profiles that reflect both its rich heritage and the region’s geographical nature.
