Salvador El Carmen from Sawt Roasting

Today we present from the new Sound Roastery from Salvador, which comes from an area extending between an elevation of 1300 to 1400 meters above sea level in the Apaneca Ilamatepec mountain range, the Carmen province is one of the main regions in the production of specialty coffee in Central America, and 60% of the coffee cherry trees in this area hold a special place as they grow slowly under shade, contributing to even ripening of the coffee fruits, increasing the concentration of natural sugars, and enhancing the coffee flavor.
