Ingredients: Aleppo thyme: two kilograms of green thyme, one kilogram of roasted sesame seeds, half a cup of roasted and finely ground chickpeas, one cup of roasted and finely ground peanuts, ground sumac, quarter cup of ground shumar, quarter cup of ground anise, quarter cup of ground coriander, two tablespoons of ground cumin, lemon salt, salt to taste, two tablespoons of olive oil. Preparation of Aleppo thyme: Wash the green thyme and dry it well, remove small stems, and rub by hand until fine. Clean the peanuts from shells and roast in a pan, then let cool. Clean chickpeas from impurities, as well as all spices. The thyme is ground at the herbal shop to get fine-grain thyme. Add two tablespoons of olive oil to the ground thyme and rub well by hand; this step is optional but gives the thyme a smooth texture and a dark green color. Roast all spices separately and grind them all. Mix all ingredients with the thyme and stir, then add lemon salt and salt to taste. Store the ground thyme in airtight glass containers, and it should be kept in the refrigerator. Note: You can grind each type of green thyme separately in a food processor, adding ingredients in stages. Where is Syrian thyme sold in Saudi Arabia?
