And I have been able, praise be to Allah, to teach yeast science for many years in the Department of Botany and Microbiology at the College of Science at King Saud University, where this practice has given me extensive experience and a broad view of research, articles, and studies published worldwide in specialized journals, books in this field, and its applications and industrial fields. The aim of this book is to provide an introductory overview of yeast science and its various applications in different industries based on the latest scientific foundations and modern innovations, including the basic applications in each field, supported by examples and illustrative images as much as possible. It also aims to present the scientific material to students in an engaging and attractive manner to help increase their scientific achievement and improve their competence in the fields of yeast science. This book contains twelve chapters, each divided into several headings covering the main topics in this field. It is worth mentioning that the College of Science at King Saud University approved, according to memorandum number 31391/2/3 dated 28/1/1442 AH, based on the recommendation of the Department of Botany and Microbiology in its ninth session for the academic year 1441 AH, held on 2/7/1441 AH, the authorship of this book for the Yeast Science course 349.
