Citrus opens the cup with a bright, controlled acidity closer to orange peel than to lemon, brown sugar settles into the middle with a warm natural sweetness that gives the cup its body, and almond with caramel provide a smooth texture and a familiar character that makes the cup easy to accept from the first pour. The flavors are clear and ordered, moving between one another without any edge — which is exactly what washed processing offers when carried out with care: an arrangement that hides nothing. Mixed varieties from 1300 to 1900 meters give the blend a balance between structure and brightness. The clean finish makes it easy to repeat at any hour without fatigue.
