Colombia Watermelon earns its name: watermelon here is not a passing note but a thread running from aroma to last sip. Strawberry opens the cup with a refreshing aromatic presence that sets up the experience, cherry follows with a brightness that gives the cup its life, and watermelon arrives with a light natural sweetness that lifts the density of the red fruit before it and leaves the cup lighter than you expect. Caramel settles into the background, giving the body a depth that keeps the cup from reading watery. Infusion processing on Caturra grown between 1500 and 2000 meters brings these notes forward clearly without costing the coffee its underlying structure. The finish is clean and refreshing, and as the cup cools the watermelon steps further forward than it was hot. Watermelon is among the harder flavors to land in coffee; its clarity here comes from close control of fermentation time. This coffee suits brewing with V60 or espresso, where its details come through clearly and give a balanced experience in either method. One of the most refreshing of our Colombian coffees, seen at its best among our drip coffee beans.
