Carmo represents the classic Brazilian profile the way it should read, not the way it is usually abbreviated. Milk chocolate opens the cup with a soft, familiar sweetness, caramel follows with depth of flavor that widens the space between the beginning and the end, and roasted nuts close the experience with a warm character that stays after the sip. Acidity is low by nature of the variety and elevation, and the body is rich and creamy, filling the mouth without weight — which makes the cup comfortable and familiar from the first sip without being dull. Red Catuai at 1300 meters with natural processing produces a forgiving extraction: it does not turn bitter if the time runs long, nor sour if it runs short. The finish is clean and lingering, without any edge. This coffee suits brewing with V60 or espresso, where its details come through clearly and give a balanced experience in either method.
