Hints: Almond - Caramel - Berry Elevation: 2100 meters Process: Natural dried Lineage: Caturra - Caturra Country: Colombia - Colombia Suitable for pour-over coffee and espresso Brief about the harvest: Kaley coffee with natural dried processing comes from farmer Martin's farms in the highlands of Cali, in the west of the country. These farmers, most of whom continue a family tradition in coffee cultivation, reside at elevations ranging from 1700 to 2200 meters above sea level, and grow Colombian, Castillo, and Caturra varieties. Cali is located 500 kilometers from the capital Bogotá, with elevations ranging from 1400 meters above sea level in the city center to 5355 meters above sea level. 80% of Cali's mountains are already in the eastern part of Cali city, and as one of the tallest mountains in Colombia, it is a great source of pride as well as water for the surrounding area, making it a suitable environment for growing the finest types of coffee in the world. Brief about the processing: Scientific term: Natural process The dried processing is the oldest method in the history of coffee, where the whole coffee cherry is sun-dried, allowing the flavor juices of the cherry and the natural sugars to merge with the bean, giving it a full-bodied texture rich in fruit sugars. The dried processing is one of the slow natural fermentation methods of coffee without chemical influences. Simply, after harvesting the ripe coffee fruits, their outer surface is cleaned, then dried on mesh beds that allow air to pass from all sides until the cherries reach the desired moisture level, then they are hulled and stored to complete the ripening cycle, then shipped to the final beneficiary.
