The leaves of the oilseed Brassica are thicker and more dense than other Brassica types — an adaptation that helps it store water and nutrients in an environment where plants find it difficult to grow. In its second year, the plant uses the stored nutrients to produce a flower spike 1 to 2 meters long (3-7 feet) bearing many yellow flowers. Its native habitat is the southern and western coastal Europe. The ability of Brassica oleracea to retain salts and calcium carbonate (lime) and its resistance to being crowded out by other plants naturally limits its appearance to calcareous sea cliffs, such as chalk cliffs on both sides of the English Channel, and on the western coast of the English Isle of Wight, which is windy. Oilseed Brassica has become an important vegetable crop on the human food list, used because it contains many nutrients stored inside its leaves during winter. Brassica oil is rich in essential nutrients, including vitamin C. A diet rich in cruciferous vegetables (such as cabbage, broccoli, and cauliflower) is associated with a reduced risk of several human cancers.
